Things I Have to Make Sure

So as you all know, Summer Vacay is right at the corner; in fact, many of you are already on summer vacation! Now is the perfect time for us to make improvements to ourselves in all different kinds of ways, and I personally am going to try to work out this summer and gain some weight (I've always been underweight and I care a lot about my looks so I really will try hard to get what I want). I've done a lot of research on working out, but I need to make sure of a few things. I also have a question about diet.
Sites tell me that I should do (if I want to gain mass specifically, and some muscle) 70-75% of my 1-rep-maximum weight, and do that for 6-9 sets of 6-8 reps. What do you guys think of these values? I'm sure people who have more experience working out would know much better than I would, as I have never truly worked out myself and I would really like to start this summer with a bang! I don't want to do anything wrong and I don't want to waste any time, and I want to do the best thing, right thing, as fast as I possibly can without rushing (:
Also, are there any rules I should follow when it comes to eating? I know I should be eating more meals a day than normal people would (like three normal meals, maybe four? and have a whole bunch of snacks in between all of them?) but are there any certain routines I should follow in my eating habits? For example, I shouldn't be eating before I go to sleep because it's bad for the goal I want to obtain?
Also, I read that I should be having a lot of everything every day - fat, protein, carbs, but protein most importantly if I wanted to gain muscle? What are some good sources of protein? I don't want something like steak because I can't really have steak every single day... I hear eggs are good, but what are some other options? I want a lot of options so I don't get bored and I don't get tired of eating the same thing every day...
beef is apparently the highest protein source in terms of meat... so what are some things I can get my beef from without going out every night and having steak?
